Ingredients You Will Need (see recipe card below for exact measurements)
- salmon, (or use sea bass, or halibut, cod, mahi-mahi, or other fish you prefer)
- apricot-pineapple preserves
- soy sauce
- orange zest
- fresh orange juice
- sliced garlic
- salt, pepper
- red pepper flakes
- Optional: cinnamon and ginger
Alternate Cooking Methods
- Stovetop: saute in a gridded style cast iron pan with 2 tablespoons cooking oil or butter add other ingredients pan-fry around 10 minutes flipping once
- Air Fryer: preheat to 400 degrees, oil spray salmon using a pie plate that's oven-proof, or place on an oil sprayed basket. add 1 tablespoon liquid smoke and whatever other ingredients 2 minutes before completed cooking on top it takes around 7 minutes or until salmon flakes easily
- Oven: preheat oven to bake at 400 degrees using the same directions as air frying and bake for 12 minutes with ingredients of choice place on top around 6 minutes into baking
- Grilled: heat the grill to 400 degrees then place salmon, skin side up, on gas grill over medium heat, or on charcoal grill 4 to 6 inches from medium coals

Glazed Salmon with Apricot, Pineapple, and Orange

Cooking salmon with a sticky glaze is always a good idea. Salmon is meaty enough to stand up to sweet, aromatic flavors and the end result will always be totally delicious.
Ingredients
- 4 - Salmon fillets around 2 pounds
- 3/4 cup apricot-pineapple preserves
- 3 tablespoons water
- 2 tablespoon fresh orange zest
- 2 tablespoon rice wine vinegar or you can use orange juice
- 2 tablespoons soy sauce
- 1 teaspoon minced garlic or granulated garlic powder
- pinch of red pepper flakes
- salt and pepper to taste
- pinch of ground ginger and cinnamon is optional
Instructions
- Combine all the glaze ingredients and bring to a simmer in a small saucepan.
- Allow cooking for a few minutes until the glaze has thickened and coats the back of a spoon easily.
- Adjust seasoning (add more soy or orange juice if necessary) and allow to cool slightly.
- Line a baking tray with foil and grease with a little oil/cooking spray.
- Place the salmon fillets on the tray, skin-side down.
- Pour over the glaze and place in the oven.
- Bake for 10 to 15 minutes ( depending on the thickness of the salmon), spooning the glaze over the salmon every 2-3 minutes, or until the salmon is glossy and sticky.
- Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.
