Mexican Meatloaf Cups

Easy to make individual cheese and beef Mexican Meatloaf cups are so much fun to eat.

The recipe is super easy and the kids just love these flavors as you can make them spicy or mild in flavor just by the kind of salsa added.

Step by Step

  1. Preheat the oven to 400 degrees and oil spray cupcake or muffin tins.
  2. Mix the meat with the ingredients listed
  3. Mix the beans with the ingredients listed below
  4. Line the cupcake tins with a light layer of meat and bake until pink it has gone
  5. Fill with beans and cheese mixture
  6. Place back into the oven until the cheese is melted

If you're not a beef lover, substitute tequila shrimp, ground turkey, or even roasted leftover boneless cooked pork or boneless cooked chopped chicken breast.

  1. cooked white or brown rice

Easy Casserole for Cinco De Mayo



We love Mexican food and all kinds of foods and love to celebrate all holidays since food is a universal language we can partake in the festivities.


This American Mexican casserole for lasagna is the perfect meal using some of the traditional ingredients we love like refried beans, ground beef, and loads of melted cheese is a great way to celebrate and day of the week even Taco Tuesday.

Mexican Meatloaf Cups

Mexican Meatloaf Cups

Fun to eat Mexican-style meatloaf made in cupcake tins. Filled with refried beans, salsa, meat, and cheese.

Ingredients

  • 1 pound of raw hamburger
  • 1 egg
  • 1 clove of minced garlic
  • 4 tablespoons of green chilies or chopped bell green
  • 1 package of chili seasoning mix
  • 1 jar of salsa any brand
  • 1 can of refried beans regular or fat-free
  • 1 cup shredded Jack cheese or a Mexican blend of cheese

Instructions

  1. Preheat the oven to 400 degrees and oil spray a muffin tin.
  2. Mix hamburger, egg, garlic, peppers, 1/2 cup salsa and 1/2 package of chili seasoning, 1/2 cup flavored breadcrumb mix till well blended.
  3. Line the greased muffin tin thinly with meat so it goes all the way up to the top edges of each cup.
  4. Bake for around 20 minutes until all the pink is gone.
  5. Drain or blot excess grease out of the cups with paper towels.
  6. In the meantime get a clean bowl, mix refried beans, 1/4 cup of salsa, and the rest of the chili seasoning.
  7. Add 1/2 cup of shredded cheese.
  8. Fill each cup with the bean mixture.
  9. Top with remaining cheese and bake for another 15 minutes or until all the cheese is melted.
  10. Serve tortilla chips to use as a scoop or optional top with sour cream, black olives, and more salsa if desired.
