All in one pan easy meal, easier than stuffing cabbage and less messy. This casserole is full of all those flavors and topped with cheesy goodness!
Ingredients
- 1 pound of ground beef
- 1/2 pound loose Italian sweet sausage
- 1 diced bell pepper
- 1 small chopped onion
- 1 garlic clove, minced
- salt and pepper to taste
- 1/2 teaspoon each of oregano, parsley, and garlic powder
- 1-3/4 cups tomato sauce (or substitute tomato soup, V8 juice, taco sauce, or salsa)
- 1 -3/4 cups water
- 1/2 cup long grain rice, uncooked
- 4 cups shredded cabbage using a knife or mandoline
- 2 cups mozzarella cheese (use sharp cheddar if you use a salsa or taco sauce)
- Garnish: Parmesan blended with Pecorino Romano Cheese and 4 torn fresh basil leaves
Instructions
- Preheat oven to 350 degrees
- Prepare a 13 x 9 baking pan with parchment paper or grease it with olive oil
- Add the peppers, onion, garlic, herbs, salt, and pepper to a Dutch oven pot.
- Stir in the beef and sausage meats.
- Saute stirring until meats are no longer pink.
- Add the tomato sauce and water then simmer to a boil and add the rice.
- Simmer this for around 25 minutes.
- Grease a deep casserole dish.
- Place half the tomato mixture in the pan, add 1/2 the cabbage top with half the mozzarella, and repeat ending with mozzarella on top.
- Cover with oil spray foil and bake for 1 hour.
- Serve with Italian Parmesan Romano blend cheese and red pepper flakes.
