Grandma's Two Egg Cake

This is a basic two-egg cake recipe just like Grandma used to make.

Growing up Grandma made this cake with simple always stocked in the pantry ingredients.

Although the cake is more dense than any cake mix would be, the flavor of homemade goodness was the best you could ask for.

We usually had a slice of this cake plain without anything on it and it reminded me a thick fluffy cookie inside.

Grandma was my Dad's mother and she would make two 8 inch cake one plain and the other one was his favorite garnished and slathered with red raspberry jam sprinkled with coconut.

Milk, eggs, flour, sugar, and a citrus taste like lemon or orange peel went into it.

The first onset of cold, snow, and winter, this was a popular dessert food on our tables after dinner.

Served plain, with fresh fruit, whipped cream, pudding, dusted with powdered sugar or a drizzle of icing.







Cake Pans and Tips for Making a Two-Egg Cake

  • depending on the pan you use baking times will vary see our recipe card for options at the end
  • replace a 1/4 cup of flour with cocoa powder for a chocolate version
  • heavily grease any pan used the sugar content is high and will stick the best option is to line any pan with parchment paper or make cupcakes
  • the cake should be kept in an air-tight container
  •  for a moister cake, poke holes in the cake and pour in the simple syrup randomly over the cake around 1/2 cup syrup (to make this simple syrup add 1 cup sugar and 1 cup water and bring to a boil to dissolve sugar then cool

Grandma Victoria Ferraro Colenzo's (heavy scratch cake)

This is the best two-egg cake Grandma used to make with a citrus flavor over a 150-year-old cake with basic ingredients.

Ingredients

  • 1 1/2 cup sugar
  • 1/2 cup butter or margarine, softened
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract or orange extract
  • Optional: 1 tablespoon or more of grated lemon or orange zest (add more for a robust citrusy flavor)

Instructions

  1. Preheat oven to 350 degrees and flour and grease two 8-inch pans or use a loaf pan and you may have extra batter for a smaller cake.
  2. Note: you can also make cupcakes
  3. Beat together into creamed mixture alternately with 1 cup milk plus 2 tablespoons milk.
  4. Bake in the greased and floured pans for 25 to 30 minutes or until a toothpick comes out clean when inserted in the middle.

Two 9 x 1-1/2 inch round baking pans 30 to 35 minutes

Two 8 x 8 x 2 or 9 x 9 x 2-inch baking pans 25 to 35 minutes

12 cup Bundt Cake or Angel Food cake pan 35 to one hour

Loaf pan for around 40 minutes
