What is easier than a grab-and-go breakfast with eggs, cheese, and meats all baked in these easy muffins or casserole, virtually nothing.

These egg breakfast muffins are not only portable but delicious and versatile because you build them, however, your family likes their omelets all in one pan or muffin tin!

We started out with crescent rolls and lined either a casserole dish or muffin tin then added bacon, cheese, and egg mixture on top, and baked to perfection.

Plus a bonus, these freeze perfectly for that busy schedule so you can have breakfast on the go go go!!

If you love layers of flavors, then this breakfast recipe is so easy, you'll make it often for sure and the whole family will love them.

  • diced tomatoes

  • thawed browned hash browns or tater tots(leftover potatoes work fine also from another meal)
  • finely minced onions or garlic
  • diced eggplant
  • shredded zucchini blotted dry
  • deli ham, roast beef, roasted chicken or turkey, hot ham, olive loaf, pepperoni
  • cooked breakfast or Italian sausage or another sausage you prefer loose or diced
  • assorted good melting cheeses any kind your prefer

Tips for Making Crescent Roll Casserole or Breakfast Muffins

  1. substitute crustless bread, brioche, or buttermilk refrigerator biscuits
  2. use corn muffin mix instead of crescent rolls
  3. use hash browns instead of bread on the bottom or crescent rolls
  4. add low-fat milk instead of half and half to reduce calories 
  5. egg whites can be substituted for whole eggs

Crescent Roll Breakfast Muffins or Casserole

Breakfast all in one pan with crescent rolls or made in a muffin pan. Easy, portable, cheesy, and delicious!

Ingredients

  • 1 can of refrigerated crescent roll dough spread into an oil-sprayed pan ( I used a 9-inch deep square) or make 8 Muffins in a sprayed muffin pan
  • 1 cup of either cooked breakfast sausage (other another you prefer) crumbled crispy bacon or chopped deli hot ham (or another deli meat you prefer like pepperoni)
  • 1/4 cup of chopped peppers raw and cleaned
  • 1 cup of thawed cooked tater tots or browned hash browns (we used already browned frozen and thawed any brand is fine)
  • 3 eggs
  • 1/4 cup half and half
  • salt, and pepper to taste
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon Italian seasoning blend
  • 2 tablespoons melted butter
  • 2 cups shredded sharp cheddar cheese ( Swiss, provolone, mozzarella, Colby or Havarti all work great)
  • Note: for muffins, use cubed cheese; it's easier and less of a mess
  • Optional ingredients substitutions or additions: mushrooms, chopped tomatoes with juice squeezed out, finely diced eggplant, shredded zucchini. chopped ham, cooked bacon or bacon bits, pork breakfast sausage cooked, chopped tater tots, diced onion, chopped spinach, chopped escarole, artichokes hearts, chopped asparagus, hot peppers, cooked broccoli or cauliflower, sliced olives, feta cheese, and any kind of your favorite shredded cheeses,

Instructions

  1. Preheat the oven to 375 degrees. Grease a 9 x 9 casserole dish or an 8 cup muffin tin with butter cooking oil spray.
  2. Beat the eggs and milk together add salt pepper, seasonings, and garlic, set aside. Press dough in the bottom of a baking pan sprayed with cooking oil or fit into muffin tins.
  3. Brush with melted butter on top of the rolls.
  4. Add any of the ingredients your family prefers on top of the dough, meats, vegetables, potatoes, greens or choice for the list, and create your own casserole or breakfast muffin.
  5. Note: For my casserole, I used roasted peppers, Italian sausage, pepperoni, and cheese with leftover cut-up baked potato and egg mixture.
  6. For my muffins: I added ham, bacon, cubed cheddar, and egg mixture.
  7. Pour egg mixture over the top of your ingredients and bake in pa reheated oven of 375 degrees until browned on top around 30 minutes for the casserole and 25 minutes for the muffins.
