It totally satisfies the urge to eat a lot of carbs in regular pizza until I reach my goal weight, then splurge on the real deal pizza dough.
The bottom is soft, not crispy like a pizza crust. I have also substituted cauliflower it isn't as delicious as this but you be the judge.

Healthier Eating Never Tasted So Good!
This low-carb zucchini pizza crust is totally and completely out of this world amazing.
Throw your skepticism aside and just believe me, for a minute especially if you are watching carbs!
Having high blood pressure, thyroid issues with weight gain easily, I love eating healthier and this is my go-to recipe for keeping calories and weight on target.
I also keep my pizza meatless, but you can adapt yours to however you like regular pizza toppings.
Tips:
- Wring out as much zucchini water as possible
- Use a food processor to shred the zucchini fine and blot dry
- Don't expect this to be a yeasty tasting dough
- If you want this even extra crispy use a pizza stone
- Adding cooked meats and like sausage and pepperoni add flavor and MORE CALORIES!
Some Ingredients You Will Need
- zucchini
- almond flour or you can also use all-purpose flour or breadcrumbs
- low-fat shredded mozzarella cheese
- shredded Parmesan cheese
- egg
- granulated garlic powder
- Italian seasoning
- Pizza sauce
- Shredded mozzarella cheese, or use extra sharp cheddar
Fun to Make and Easy
I’ve made this a few times now, and each time it comes out even better with practice.
Really the more water you take out the better results.
Preheat a baking stone or baking sheet for at least 30 minutes.
The crust needs to start out on that hot, hot stone in order to brown or will stay soft.
These recipes are not to say they taste just like risen pizza but the taste is so outrageous to be zucchini and believe me I am a huge pizza fan!
The first thing to realize is this dough is a little hard to work with because it's soft and sticky.
They will both bake up perfectly.
Not Like Yeast Dough
As I mention before this is nothing like a yeast dough or meant to ever take the place of original pizza.
It's a great alternative however when you need to watch carbs, weight and other medical conditions that require no flour in your diet.
I was totally excited about how the family tried it and was in total amazement how good it was.
Zucchini is Good For You!
Zucchini is definitely a super healthy food.
It's low in calories (a medium zucchini has around just 30 calories) and chock full of heart-healthy nutrients including Vitamins C and A, potassium, folate, and fiber.
This is the perfect start to eating a healthy diet that tastes great!
Crispy Style With Almond Flour:
2-3 medium zucchini about 1 1/2 cup shredded
1/3 cup almond flour or you can also use all-purpose flour or breadcrumbs
1/2 cup low-fat shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
1 large egg
1 teaspoon granulated garlic powder
1 tablespoon Italian seasoning
Pizza sauce
Shredded mozzarella cheese, or use extra sharp cheddar
Optional Toppings: olives, mushrooms, peppers, any kinds of cooked meats, or whatever you love on pizza.
Pre-heat oven to 500 degrees.
Line a baking sheet with parchment paper and spray the paper with cooking spray, set aside.
Place shredded zucchini on a plate lined with a few layers of paper towel.
Sprinkle with one tablespoon of salt.
Set aside for 10 minutes.
Squeeze the excess moisture out of the zucchini by using a cheesecloth or many paper towels to blot dry.
In a medium bowl, combine the shredded zucchini, flour, egg, cheese, and Italian spices and garlic powder.
Combine mixture with a spoon until fully blended then transfer the mixture on to greased parchment paper.
Press the dough into the desired shape and thickness on the greased parchment paper.
Bake for about 10 minutes until the crust looks set and the bottom is starting to brown.
Remove the pizza crust from the oven.
Add the sauce, cheese, and toppings if you are using.
Return to oven and bake for another 5-7 minutes or until the cheese is melted and bubbly.
Pizza Topping Suggestions:
- Chopped Onions
- Mince Eggplant
- Sliced Mushrooms
- For Sausage, flavor sprinkle with 1/4 teaspoon fennel seeds
- Spinach leaves
- Boiled escarole
- Kale
- Arugula
- Olives sliced green or black
- Chopped peppers any kind
Zucchini Squash Pizza Recipe #2
This is a soft crust pizza and tastes more like a zucchini quiche to me with sauce and cheese.
1 shredded medium zucchini or yellow squash ( I put mine either in the food processor or grate it. Then blot dry with paper towels if it's very wet squeeze out as much as you can)
1 teaspoon granulated garlic
1/2 teaspoon parsley
1 egg white or whole egg
1/3 cup Parmesan Romano cheese grated
3 tablespoons Italian flavored bread crumbs
1 cup tomato sauce any kind for the topping ( I used 1 fresh large plum tomato put through the food processor left a little chunky)
1 cup low moisture mozzarella cheese grated
salt, pepper to taste
Optional: red pepper flakes to taste, cooked meats for toppings, or any chopped vegetables you like
Mix the grated squash, garlic, salt, pepper, parsley cheese, and eggs in a bowl, add the bread crumbs last mix till blended.
Spread into a greased pie plate and bake at 350 for around 15 to 25 minutes till browned on the edges depending on thickness.
Remove from the oven.
Add the sauce and cheese and any other topping you like. Broil for around 3 minutes on high or until the cheese is golden brown. Serve immediately.
