Pure lemon extract is made from the essential oil of fresh lemons combined with alcohol as a preservative.

It's extremely potent, so a little goes a long way to be used in cakes, cookies and anything else when a recipe calls for lemon extract in it.

Our easy homemade lemon extract can be used to add lemon flavors to baked foods and other desserts, such as breads, cakes, cookies, muffins, pies, frostings, glazes, custards, sorbet, sauces, yogurt, and mousse.

Homemade Lemon Extract Recipe

This is a recipe on how to make homemade lemon extract to use in cakes, cookies or whenever a recipe calls for lemon extract

Ingredients

  • 1 cup vodka
  • 6 whole lemons peeled and washed and peel with no white part of the rind

Instructions

  1. Slice up the rind in string form and add to the vodka place into a medium size saucepan.
  2. Heat to boiling then cool and add to a glass jar.
  3. Store for 4 weeks in a dark cupboard area.
  4. Shake occasionally.
  5. Use without rind in it by straining it into a clean glass-covered jar.
  6. Store it in the refrigerator or dark cabinet area.
  7. Use as needed in cakes, cookies, and other recipes calling for lemon extract.
